Totally True Tales from Texas

A New Challenge. Get Healthy.

Updated: 2014-10-04T18:57:10.088-07:00

Day 1

Today was a good day. Easy breakfast of lunch meat and a pinch of jerky for a snack. Water is my new best friend. Lunch was some lettuce and turkey. I took bites of a raw tomato, but man are they acidic. I felt like gagging after each bite. Snack of celery and skim milk. Almost time for some chicken for dinner and then my walk.

The First Vegetable of the Week...

The Artichoke. Just the name conjures ideas of suffocation and the plant looks sharp and thirstily. In contrast to the deadly form seen on the produce aisles, Wikipedia ( shows the plant has a beautiful purple flower. Purple foods must be good. My wife bought a can of artichoke crowns. Who knew vegetables recognized the monarchy?

A New Day!

Starting on Monday, I will begin my quest to become healthier. My challenge will be to eat one serving of vegetables each day (a new vegetable will be choosen each week), follow the tenets of the South Beach Diet, and walk enough to listen to a full album each night. Following these three rules, I hope to reach my goal weight of 205 by this time next year.
