I was interested and pleased to see a link to my family's old web site for the Not-Chicken Soup recipe. Like all other geocities.com web sites, however, that one has disappeared. You can still find this recipe (and the rest of the web site at:

Adam - Sorry. This is an old post and links sometimes break. Here is a list of the recipes from the site that had the pancake recipe - They have a bunch of pancake recipes listed, some GF and some not:

http://www.jewishfood-list.com/recipes/pesach/klp_brunch/&klp_brunch_index.html

I would avoid oat matzo meal for pancakes, as it's too heavy. I would try about 25% quinoa flour to 75% potato starch and include either kosher l'pesach baking powder or whip the egg whites separately until they're stiff to help the pancakes be fluffy. Let me know how it turns out!

Would love it if you could find the pancake recipe again. The link is bad.

I'm figuring I could use Oat Matza Meal, Quinoa Flour and Potato Starch and get a pretty good product out of it. Was just looking for other ideas.
