Slowly-Roasted Glazed Pork: Credit to Tasty by Buzzfeed


I've always been a fan of Tasty by Buzzfeed ever since I saw an article on Facebook. One of the many recipes that catches my attention is the Slowly-Roasted Glazed Pork below. I did make a few changes according to my taste but overall the result was phenomenal. By the way, the recipe below is the one I saw on Facebook. Feel free to grab it or modify it according to your taste buds.

1 cup plus 2 Tbsp. soy sauce, divided
¼ cup granulated sugar
3 Tbsp. chopped garlic
¼ cup chopped scallions
2–3 pounds boneless, skin-on pork shoulder
1 bunch asparagus, halved
6 Yukon potatoes, diced
2 Tbsp. olive oil
Kosher salt
Freshly ground black pepper
1 cup packed dark brown sugar
½ cup honey

Preheat the oven to 275ºF.

In a large bowl, combine one cup of the soy sauce with the sugar, garlic, and scallions, stirring until mixed.

Score the skin of the pork by slicing a crosshatch pattern through the skin down to the meat. This will help excess fat render out and allow more of the marinade to soak in.

Place the pork in the marinade and toss to coat evenly. Marinate for one hour.

On a baking sheet, place the asparagus halves to the right and diced potatoes to the left. Toss the vegetables with the oil, salt, and pepper. Place the marinated pork in the middle of the baking sheet. Bake one to one and a half hours, depending on the weight of the pork.

Raise the heat of the oven to 500ºF.

In a small bowl, combine the brown sugar, honey, and remaining soy sauce, stirring until smooth.

Spoon the honey glaze over the top of the pork, making sure to fill the cracks and crevices on top. Bake for 20 minutes until sugar is dark brown and caramelized, and the top of the pork is crispy.

Remove the vegetables and pork from the tray, making sure to save all the juices.

Slice the pork into ½-inch slices, and plate with the roasted vegetables. Spoon the reserved pan juices on top of the pork, and enjoy!

Chicken Menudo


I got the chance to make one of my favorites Filipino dish this week called Chicken Menudo. I decided to cook this dish because I have all the ingredients I needed in my fridge. You will find the procedures on how to make this dish below. Comments are welcome. Enjoy!!!!


1 lb boneless chicken breast, sliced into cubes
3 medium size potatoes, cut into bite size
2 medium size carrots, cut diagonally
3 cloves of garlic, crushed
1 small onion, sliced into small pieces
1 small can chicken broth
1 tbsp soy sauce (optional)
1 small can tomato sauce
cooking oil
2 medium size jalapeno, cut diagonally (optional)


1. Heat cooking oil in the pan. Add onions and garlic and saute the sliced boneless chicken till brown.
2. When the meat turns brown  add the soy sauce plus add the potatoes and carrots and saute for at least 2-3 minutes before adding the chicken broth. Let it boil till meat is cook and add water if needed.
3. Add tomato sauce and let it boil again. Add salt and pepper if needed.
4. I added the jalapeno to give the dish a little kick. Served hot with rice and voila you got a delicious meal easily prepared for you and your family!


Pork Estofado


 I have been cooking a lot lately and I loved it. Moving to another city in Texas has been great financially but we are terribly missing El Paso and would love to go back and settle there one day. When I am not working, I usually have plenty of time to make food or baked any goodies that my husband love. Anyway, last week I cooked several Filipino dish but there's one dish that really stood out from the rest. The dish is called Pork Estofado. I got the recipe from Panlasang Pinoy but I tweak the recipe to suit my taste and needs. For instance, I added some potatoes since my husband like potatoes a lot.


 2 lbs pork belly or (any kind will do)
3-4 ripe plantain, peeled and sliced
2 medium carrots, slice
2 medium potatoes, slice
3 cloves garlic, minced
1 tbsp brown sugar
1/2 c soy sauce
3 pieces dried bay leaves
1/4 cup cane vinegar
1/4 tsp black pepper
1 1/2 cup water
cooking oil
salt to taste


1. Heat the oil in a cooking pan.
2. Saute the garlic until it turns a little brown.
3. Add the meat and cook for 2 minutes.
4. Add-in the soy sauce, water, bay leaves and ground black pepper. Let it boil and simmer for 30-40 minutes (till meat is tender).
5. Add vinegar and sugar. Cook for another 15 minutes (add water if needed).
6. Add the potatoes and carrots. Then add the banana. Cook for another 10 minutes.
7. Add salt to taste. Serve hot with rice!

Filipino Skinless Longganisa ( Pork Sausage)


I finally made my first ever homemade longganisa (Filipino cured pork sausage) about a week ago. I could not be more happier because my first attempt  was a success. I was able to make 2 dozens of cured pork sausage which we consumed within two days. I had follow a simple recipe which I got from my mother who is a great mentor to me when it comes to cooking. Take a long at the simple ingredients below.

1 pound ground pork
1/4 cup brown sugar
2-4 tbsp Worcester sauce.
3 tbsp soy sauce
salt and pepper
1 tbsp mince garlic
1 tbsp mince onion
carrots (optional)
wax paper (cut into 4.5 inches x 3 inches)

1. Mix all ingredients and marinate for at least 3 hours.
2. Roll a small amount of the mixture in a wax paper
3. Place the rolled Filipino sausage in the freezer for 3 hours or until ready to cook
4. When you are ready to cook, heat oil in a frying pan or wok
5. Unwrap the sausage and fry in batches in hot oil until meat turns golden brown
6. Place it on a paper towel to drain any excess oil
7. Serve with rice and vinegar-garlic dip sauce

Pork Adobo and Lumpia


It makes me happy when my husband appreciates all the things that I do for him. For instance, he requested me to cook some Filipino food namely Adobo and Lumpia (Egg rolls) two days ago. Since he requested since Saturday I told him to buy me the ingredients and I will do the rest.
 Anyway, I made the egg rolls as well the pork chop adobo. He was so happy when he came home and I took a couple of pictures below. Check out what I've made for my spouse. He sure is one happy husband!

Lechon Manok on the Menu


I am planning to cook some homemade Lechon Manok (Roasted Chicken) this coming week for my husband. He has been asking me to make the lechon manok I had made for him before because he really love the taste of it. Smoked Ribs


(image) My husband and I had awesome dinner last night courtesy of our good friend Xavier who gave us his own version of smoked ribs. Actually, it was his first time to smoked some ribs because his girlfriend Crystal gifted him a brand new smoker for Valentine's Day. Of course, I was really happy because I don't have to cook anything for our supper because dinner is already provided. Take a look at the pic below and tell me what you think? The last time I had a big event, I decided to make all of the food myself, and I have to say that it was very exhaustive. Christmas Dish 2013


I was working on Christmas Eve at my place of work until 3 o'clock in the afternoon and I was worried sick because I thought I won't be able to make food for our Christmas Eve dinner. Thankfully, I was able to do it after resting about an hour or so after I arrived from home and decided to make 3 types of Filipino dish that my husband had requested for me to make. The three dishes that I cooked were Pinoy Style Spaghetti, Bake Stuff Pompano Fish and Special Chicken Caldereta. Take a look at the photos below and I will be posting the recipe later on.

Pork Ginagmay/Baboy Ginagmay


My mom and my grandmother has always been my greatest inspiration when it comes to cooking some delicious traditional food from the Philippines. I grew up watching them prepare food everyday in our kitchen as well as trying out new recipes for the entire family. So today, I decided to share with you guys this delicious recipe which can be prepared in various ways. Below, is my take on this recipe called Pork Ginagmay which are served pretty much in every little restaurants in the Philippines.


1 lb. pork (stew meat/slice into bite size)
2 large potatoes (slice into cubes)
2 tbsp. soy sauce
1 cup water
1/2 cup of green peas
1 tbsp. asuete (optional)
salt and pepper to taste
4 cloves garlic (minced)
1 small onion
cooking oil
1 large bell pepper (green,red,orange)


1. Saute the garlic and onions. Add the meat, saute until the pinkish color is gone. Simmer the meat for a minute or two.

2. Add the asuete (food coloring) and stir, add soy sauce and simmer for another five minutes.

3. Add 1 cup of water and simmer until the meat becomes tender. When the meat is tender, you can finally add the carrots and potatoes and simmer for another 3 minutes or so.

4. Lastly, add the green peas and bell pepper. Simmer until it is done. Serve hot with steam rice. Enjoy folks!

One of the many things I miss about being in the Philippines is not able to dine out at one of my favorite fast food place called Jollibee. I am craving for some Chicken Joy and Jollibee Spaghetti. I am very thankful for having a mother who is very talented. She is a good cook, smart and a great provider for the whole family. Being away from my family makes me a little sad sometimes. Food Adventure


Dearest husband and I had been dining out a whole lot lately. As a matter of fact, we have been trying new cuisine at least once a week when we both have the same days off from our places of work. One of my favorite dishes that I tried was fried calamari. DH and I also went to try out our local Vietnamese restaurants here and wow I am so impressed; the food was perfectly cooked to my liking and so delicious. Lastly, we went to one of my favorite restaurant of all times and that is Texas Road House. I am forever grateful for having a husband who is as an adventurous as me.

My Sister's Gulaman Recipe


I love having a big family because we can always rely on each other. For instance, one of my younger sister’s specialties is making delicious desserts. I was drooling after I saw this picture a month ago when she made some gulamanfor my other sister's birthday. It looks so delicious and according to her the ingredients were not expensive. Cake Decorating


My lady boss has been taking classes for cake decorating for the past two months now and the picture below is one of her many creations. As a matter of fact, she baked my cake for my six wedding anniversary several weeks ago and the outcome was beautiful. My husband really enjoyed what she did with the decorations because I requested her to customize the cake toppers by designing an Xbox 360, purses and lipstick for me.

Fried Chicken Adobo Wings


Yesterday, I had the chance to cook some homemade food for my husband and me. One of my husband's favorite Filipino foods is adobo but I went ahead and made it fried chicken adobo. The procedure is the same as when you cook a regular adobo but you fried the cook chicken afterwards. My husband was so happy and we finished eating ten pieces of the chicken wings by ourselves. Magic Sarap Seasoning Mix
