Balinese Pumpkin Curry (Kare Waluh)

Thu, 12 Oct 2017 01:35:39 +0000

This delicious recipe was one that we were taught in a Balinese cooking class at Casa Luna Cooking School last week. It’s so easy to make and really flavoursome. We’re not massive fans of really spicy food so this dish was perfect as it’s not too hot. Most of the ingredients are readily available in the UK, but incase you struggle to get hold of any we’ve added substitutes which should work just as well. Hope you enjoy! -- posted by hello

Gluten-Free Slow Cooked Fajitas

Thu, 12 Oct 2017 01:40:46 +0000

These delicious slow cooked fajitas are perfect for an evening with friends. We’ve used gram flour to make the tortillas which is sometimes referred to as chickpea flour and makes a tasty, healthy and gluten free alternative to your typical tortillas. When making the tortillas it’s important to make sure you only just cover the bottom of the pan with the mixture, otherwise you’ll end up making them too thick (a bit like pancakes) and they’re much easier to assemble when thin. We like using the slow cooker to make meals when we have a busy day ahead, as it’s super easy to pop everything in, turn on and eat as soon as work’s finished. Optional extras: mashed avocado, natural yoghurt. -- posted by hello

Winter Squash-Apple Brunch Cake (BH&G)

Thu, 12 Oct 2017 01:45:23 +0000

This is a recipe saved from March 1996 edition of Better Homes & Gardens magazine. The picture of the cake baked in a springform pan was gorgeous. Tender slices of apple and raisins cap the moist spice cake. They may have used more sliced apples than called for in the recipe to make it look so great. -- posted by Bren in LR

Scotch Eggs

Thu, 12 Oct 2017 01:49:46 +0000

Scotch Eggs If you love the classic pub snack ‘scotch eggs’ then these delicious, healthy alternatives are not to be missed. We’ve created them using lean turkey mince and coated in ground almonds instead of breadcrumbs to create a nutritious snack that saves on calories. When boiling the eggs don’t be tempted to leave for longer than 5 minutes. This is just enough time to cook the whites and the eggs will cook further when they are in the oven. -- posted by hello

Lemon Curd

Thu, 12 Oct 2017 01:51:40 +0000

This homemade lemon curd recipe is quick, easy to make and it tastes delicious. When the lemon curd is ready, don’t worry if you end up with lumps in the mixture (We sometimes end up with lumps of egg or coconut oil) you can simply strain the mixture before placing it in the jar. -- posted by hello

Kim's Mexican Stew

Thu, 12 Oct 2017 04:11:18 +0000

I worked with Kim when I first came to Arkansas. Her husband was in the military and she had to move away, but she will be remembered for her great Mexican Stew. She would bring a full crockpot to the office and we would all enjoy this for lunch. This can be made in a regular soup pot on the stove (cook less time) or in the crock pot. It makes a lot so you need a large pot or crockpot. -- posted by Bren in LR

Mini Quiche Tarts

Fri, 13 Oct 2017 03:42:46 +0000

These mouth-watering quiches make such a delicious snack. We’ve made the base out of almonds and gluten free oats and the filling is eggs, sun dried tomatoes, kale and red onion with a dash of nutritional yeast. Traditional quiche is not usually a healthy option as it generally contains quite a lot of cream cheese. For this nutritious alternative we’ve substituted cream cheese for skimmed milk and used nutritional yeast to give the cheesy flavour. We’ve also used a mix of whole eggs and egg whites to help manage cholesterol levels. You can choose any fillings you like instead of the sun dried tomatoes, kale and red onion. Hope you enjoy! -- posted by hello

Banana, Almond Butter & Cacao Energy Bites

Fri, 13 Oct 2017 03:49:37 +0000

These easy to make, no-bake truffle treats are so delicious and full of nutrition. They make the perfect after dinner sweet treat, and the best part about this recipe is they keep in the freezer so you can just take them out as and when you need them. We love the combination of bananas and almonds, we discovered it recently while making my new ice-cream recipe, so this sweet snack has soon become a new favourite of ours. The ingredients in this recipe are all wholesome and all have anti-aging benefits, so if you’re looking to turn back the clock this is a fail safe as it’s full of magnesium (nuts, seeds and banana) probiotics (cacao) and polyphenols (cacao). If you find it difficult to blend the dates in your food processor a good tip is to soak them in hot water for a few minutes first which should soften them. Optional toppings: chopped hazelnuts, blueberry powder, ground almonds, chia seeds. -- posted by hello

Banana & Almond Ice Cream

Fri, 13 Oct 2017 03:51:27 +0000

If you haven’t tried making banana ice cream (or nana nice-cream as it’s sometimes called) then you need to give it a go. It’s super delicious and really easy to make. All you need to do is freeze chopped up bananas, then blend them – We absolutely love it. Be sure to use really ripe bananas. They should be quite soft and really sweet, it’s such a great way of using up over ripe bananas too so they don’t go to waste. We’ve added a couple of ingredients to this version and we’re not disappointed with how it’s turned out, as it tastes great. Optional toppings: chopped hazelnuts & honey (or maple syrup) -- posted by hello

Chicken Conquistador

Fri, 13 Oct 2017 21:48:53 +0000

You will have fun cooking this one. It does not require much effort unless you skimp and buy bone-in thighs. De-boning thighs can be a real pain, especially if the knife slips. So use boneless, skinless thighs and/or breasts. You will need bacon slices, a Can of Ortega whole chilies, toothpicks, and your chicken pieces. You can up the ante on this one with a jalapeno or habanero pepper at your own risk, but first remove the seeds -- posted by Christian B.

Plum & Raspberry Tart

Sat, 14 Oct 2017 08:54:33 +0000

This gluten-free plum and raspberry tart recipe is our new favourite dessert recipe. It’s made using an almond shortcrust pastry case that’s not only super healthy and nutritious, but the honey adds a sweet flavour to it too. It tastes far too delicious to be good for you, but it really is. When making the crust don’t be tempted to leave it too thick, about 0.5cm is as thick as we would go with it. Don’t worry about it breaking whilst baking, this should only happen if you forget to grease the baking tins and it might break as you remove the tarts. As long as the tins/cases are greased before you add the almond mixture there should be no breakages or leaks. Optional: Sea buckthorn powder to serve -- posted by hello

Lemon Curd Tarts

Sat, 14 Oct 2017 09:01:20 +0000

A few weeks ago we developed this delicious lemon curd recipe and have been so in love with it ever since. It’s so versatile you can eat it on toast, with salad, on scones or even in a delicious and healthy dessert tart, just like this one. Not only is this recipe super delicious, it’s also really healthy, gluten free and sugar free. When you make the lemon curd don’t worry if it’s quite lumpy, you just need to put it through a sieve to remove the lumps and you’ll have a fruity, delicious and smooth filling for your tarts. -- posted by hello

If you have a mandolin, we’d recommend using that to slice the courgette as you want them as thin as possible to make them nice and crispy, if not you can use a knife too. If you’re looking for a healthy snack that’s sweet, delicious and super easy to make, this recipe is perfect for you. It only takes 5 minutes to make and is a great way of using up overripe bananas. You could enjoy this as a sweet, delicious breakfast with Greek yoghurt or serve with banana ice cream and fresh fruit for a super healthy dessert. Pea & Sweetcorn Fritters

Sun, 15 Oct 2017 06:34:01 +0000

These mini pea and sweetcorn fritters make a delicious healthy snack or breakfast which we sometimes serve with fried or poached eggs. We only ever use 1/2 teaspoon of the chilli flakes as this gives the fritters a bit of a kick, but doesn’t make them too spicy. When making these you might find that the fritters split or crack when you try to flip them over (it shouldn’t happen if you only use 1 teaspoon of the mixture). If this happens we’d recommend trying them with less mixture and making smaller fritters, this way it’s easier to flip them without breaking. -- posted by hello

Lemon & Almond Slices

Tue, 17 Oct 2017 02:55:22 +0000

These gluten free slices of zesty lemon goodness really are hard to resist. They’re light, tangy and the perfect accompaniment to a nice cup of tea. To make the lemon topping you’ll need to use a brand of coconut milk that doesn’t contain emulsifiers (guar gum, carrageenan, methyl cellulose, corn starch, sodium or potassium metabisulfate) as these are chemical additives which cause the fatty and watery layers to stop separating from one another, so you won’t be able to achieve the thick creamy consistency required. Almond & Banana Pancakes

Wed, 18 Oct 2017 01:54:29 +0000

For those that prefer a sweet meal to start their day, these banana and almond pancakes are the perfect healthy option. We’ve developed this recipe for Fertility Road magazine, so not only is it delicious and nutritious but it’s also a fantastic way of eating yourself pregnant too. Bananas are a great food to increase fertility in women as they are a fantastic source of B vitamins, fibre, protein, folate, iron and vitamin C. Eggs are such a great source of protein and iron (which are both really important nutrients for fertility). In addition they are also a fantastic source of vitamin D. Women who struggle with fertility often suffer from a deficiency in vitamin D. Almonds are a rich source of vitamin E. They also help improve insulin resistance, which has been shown to increase fertility levels in women. The toppings on this recipe also play an important part in improving fertility. One serving per day of full fat dairy can improve fertility rates and Greek yoghurt is a delicious and calcium-rich option to increase your chances of conception. It is also rich in vitamin D and contains two times as much protein as regular yoghurt. Berries are loaded with vitamin C and folate, and are full of natural antioxidants and anti-inflammatory nutrients, which help boost both female and male fertility. So if you’re looking to enhance your chance of conception, this delicious, healthy breakfast recipe could just do the trick. -- posted by hello[...]

Coconut Beet Samosas

Wed, 18 Oct 2017 16:58:36 +0000

This falls just short of a vegan dish because of the butter in the crust. The butter gives the crust it's beautiful, biscuit-like character, but this is still a tasty recipe without it. The focus here was supposed to be coconut - and there's no denying that it's prominent - but really, the coconut is an invited guest in the beet's house. Beets tend to do that, but the coconut does get it's day. Instructions for opening a coconut are included, though an equal amount of unsweetened coconut (about 1 pound) can be substituted if desired. -- posted by Late Night Gourmet
