This delicious recipe was one that we were taught in a Balinese cooking class at Casa Luna Cooking School last week. It’s so easy to make and really flavoursome. We’re not massive fans of really spicy food so this dish was perfect as it’s not too hot. These delicious slow cooked fajitas are perfect for an evening with friends. We’ve used gram flour to make the tortillas which is sometimes referred to as chickpea flour and makes a tasty, healthy and gluten free alternative to your typical tortillas. When making the tortillas it’s important to make sure you only just cover the bottom of the pan with the mixture, otherwise you’ll end up making them too thick (a bit like pancakes) and they’re much easier to assemble when thin. We like using the slow cooker to make meals when we have a busy day ahead, as it’s super easy to pop everything in, turn on and eat as soon as work’s finished. I worked with Kim when I first came to Arkansas. Her husband was in the military and she had to move away, but she will be remembered for her great Mexican Stew. She would bring a full crockpot to the office and we would all enjoy this for lunch. This can be made in a regular soup pot on the stove (cook less time) or in the crock pot. This gluten-free plum and raspberry tart recipe is our new favourite dessert recipe. It’s made using an almond shortcrust pastry case that’s not only super healthy and nutritious, but the honey adds a sweet flavour to it too. It tastes far too delicious to be good for you, but it really is. When making the crust don’t be tempted to leave it too thick, about 0.5cm is as thick as we would go with it. Don’t worry about it breaking whilst baking, this should only happen if you forget to grease the baking tins and it might break as you remove the tarts. We only ever use 1/2 teaspoon of the chilli flakes as this gives the fritters a bit of a kick, but doesn’t make them too spicy. When making these you might find that the fritters split or crack when you try to flip them over (it shouldn’t happen if you only use 1 teaspoon of the mixture). This falls just short of a vegan dish because of the butter in the crust. The butter gives the crust it's beautiful, biscuit-like character, but this is still a tasty recipe without it. The focus here was supposed to be coconut - and there's no denying that it's prominent - but really, the coconut is an invited guest in the beet's house. Beets tend to do that, but the coconut does get it's day.
