Making these pillows of potatoey goodness isn't as hard as the many steps below make it look. My family never pan fried the potatoes after boiling, but I like that relatively new development in the recipe, so I've added it in. I always look for it in the supermarket and, in the spring, I usually buy a plant at my local garden center to use all summer! This makes a nice hearty soup. Really good way to keep a quart or two of sugar, buy lots of beans at Christmas or online, where they can be had for a reasonable price, sometimes they are available at Costco during the winter months. When the sugar starts running low, or below half, add more, stir and keep again. It will never go away. If you want to, the sugar can be ground with the vanilla and sifted before storing, and it's great that way too, but don't use as much of it. -- posted by Tuck Burnette

Make with organic lemons or scrub regular ones with a stiff brush in hot water. I live in Virginia, and Everclear isn't sold here, whenever I go to the Outer Banks I buy several bottles of it to make liqueur. You could also look for high proof vodka. Recipe came from a castle, near some olive trees, before I was done. I wasn't planning on publishing this recipe yet, because it really is Italian, and uses English approximations for metric system equivalents. It also uses leaf gelatin, which you have to buy online, or in fancy grocery stores, technically, 3 sheets of gel are the same as 1 pack of granulated, except gelatin sheets bloom in water openly, and as we know, powdered gelatin, soaks it up, so I really can't say if that would throw off the flavors? To make ricotta at home pasteurized whole milk is required, not ultra pasteurized, some markets label milk pasteurized, when indeed it is the latter (i.e. the Wall Town near you), a good indicator of this is that it will say on the label, Use within 5 days after opening; that means it's been pasteurized. Most grocery stores sell a variety of it, but if not, go elsewhere. It is okay for the cream and buttermilk to be regular. If you have some sour milk lying around, use that, or make your own by letting it spoil. Note additionally: There is a common belief that a person can make ricotta by draining it through a layer of coffee filters, this is an outright lie, the people who say it, have never done it, it's cheap, deplorable, is a mess, and it doesn't work. Do not do this, take your big A to world market or bed and beyond and buy several sheets of good cheesecloth, or use a clean flour sack towel, sold in packs of three for 9.99 at one of the above mentioned stotes.
