I originally had these in Italy & they were succulent scrumptious STUFFED veal chops. They were DIVINE. Nice texture on the outside, oozing cheese with glorious truffles on the inside. What’s not to love? My veal chops were too thin to stuff so I opted to top these with the fabulous fontina cheese & then with the grated truffles *ah glorious truffles* If you opted for the thicker chops you could certainly stuff them instead of topping them. -- posted by Kelton.A

This recipe is for a 2 quart slow cooker. If you have a larger one, double the recipe but NOT the cooking time. As with many slow cooker recipes, the method contributes to the success of the recipe. Make sure the apples are in large chunks as directed, or they will get too soft. Also, keep an eye on the edges, they tend to burn if left to cook too long. I use this while camping in our little RV trailer, and it smells delicious. I can start it right before I start dinner, and it will be ready by the time we finish dinner and are ready for dessert later. Hands down the best lefse I've ever eaten was from my neighbor growing up, Mrs. Omlid. Her lefse was always thin and delicious no matter how it was served (butter, sugar, jam.. anything!) I recently (Dec 2016) had the privilege of spending an afternoon with her to learn the recipe and the craft of making awesome lefse. It will work best if you have a lefse griddle, but any heavy, large skillet with constant heat will work. Also needed: a heavy, grooved rolling pin with a cloth covering or sock over it, a heavy board, also covered in cloth, and a lefse stick for flipping. I have a sort of new tradition with my friends where I host "crappy" dinner parties. They're "crappy" in the sense that I am not going to worry over-much about how clean the house is, and the plates will be paper, and you have to bring your own wine, and hopefully some amazing specialty of your own to share -- there's no formal seating, and things will probably start loose and stay loose. ANYWAY. Last time we had a crappy dinner party I got a wild hair to make paella. I had a lb of bomba rice from Kalustyan's in NYC, but you can use arborio. I made up the recipe from looking at several different ones online and adapting for not having a real paella pan. It came out ridic -- a showstopper. It will stay ridic for a good amount of time too as long as you cover it tightly, so you can finish it and put it to the side for a bit. The leftovers are also sooo good. Labor-intensive but fun and worth it. We were having so much fun I forgot to take a picture of the finished product. -- posted by Betty Rocker

The base of this Thai soup / curry, is coconut milk, so it has a rich and creamy flavor. Though it would often be listed as a soup, in my opinion tom kha gai (ต้มข่าไก่) is more of a curry due to the way in which it's eaten. It's served in a bowl along with plate of rice on the side, and it's usually scooped by spoon by spoon onto the rice and eaten bite by bite. Similar to Long John Silvers' batter. Feel free to add some other seasonings, such as garlic powder, lemon pepper, onion powder, even cayenne pepper. This is similar to a tempura batter, so don't try to get too much batter on your fish or chicken pieces. And don't use too big of pieces of fish/chicken or the batter will burn before the food gets done.This is enough batter to coat about 10 medium chicken strips of small fish fillets.
