Irish Glazed Corned Beef Brisket

This is from a magazine article written by a local chef in March 2001 for St. Patrick Day recipes. He had spent a month in Ireland years ago. This is my son's favorite corned beef. The chef wrote, "Before refrigeration, most people depended on cured and salted meats to get them through long winters. The term "corned" refers to the corn-sized crystals of curing salt used to brine the beef. Rather than try to cure your own beef, I suggest you look for corned beef that is pre-cured and packaged with the spices included. Follow the package directions for cooking. It will take several hours to cook and the portion you buy will shrink about 20 percent, so plan accordingly. Slice cooked corned beef at an angle, across the grain, for best results." Prep time does not include the cooking time for the corned beef brisket that should be done and ready to be glazed with the recipe below. -- posted by Bren in LR

This is something I made up so that I could use some leftover frozen custard I wanted to get rid of. Luckily I was inspired and it worked really well and the family loved it. Rigatoni With Bolognese Sauce

This hardy meat sauce is often referred to as Ragù, short for Ragù alla Bolognese.  A version of it made with meatballs, sausages, and any leftover meat was a staple in our household, served at least one night every week.   In parts of Italy, the sauce starts with a battuto, a flavor pack made with minced carrots, celery, onion and salt pork.  Once cooked together, it is called soffritto.  Mom usually started her "gravy" with slices of salt pork, discarded once rendered.  Next she sautéed onion and garlic until transparent and also discarded them.  Meats were browned and mostly cooked through, followed by tomato paste, crushed tomatoes and lots of basil.  Here's a very simple version we frequently make at home.  It's the ultimate comfort food, is really easy to make, and it is simply delicious.  We always double the recipe and freeze dinner portions.  Italians believe leftover sauce tastes even better than the original.  "Italian" just doesn't get any better than this!  Remember, PLEASE DO NOT overcook the pasta. -- posted by Peter Steriti

This dish is a take on the traditional Teriyaki dish which originates from Japan. It is a dish in which foods are grilled or broiled with glaze consisting of soy sauce, mirin and sugar. I have tweaked this a bit to add so more flavour and swapped the sugar for honey and kept it to a low, to keep it more macro friendly. As I carry a multitude of different beans in my cupboards, so the usual Haricot bean can be immediately changed. Then you are going to make a tomato sauce. Hmm, spices can be changed, herbs can be changed. I suppose what I mean to say is, beans can be made your own very easily, you just gotta do it. High Protein, all natural ingredients. These are not super sweet. The chia buckwheat groats can be found at Trader Joes or other stores carrying health foods and whole foods. I used a product called Super Seeds Ancient Grains for this recipe. Feel free to play around with it. Also, the almond butter can be swapped for any other kind of nut butter and the honey can be swapped for maple syrup or agave syrup. If you like sweeter bars, consider adding chocolate chips or drizzling melted chocolate on top prior to slicing. It's all about experimenting! Must. Love. Garlic......and mayo. We made this spread to put on homemade Chicken Club sandwiches. This is a great base recipe that could have some of the garlic toned down and other seasonings and flavors added to create your own sandwich spread. This, as written, would be "Garlic Flavored Garlic" mayo and makes a great substitute for "plain mayo" in other recipes such as breaded chicken cutlets (in lieu of flour and egg method.) I modified this recipe slightly from the Cook's Country mag from Feb of 2007. They have changed their version since then, but I don't think it is as good. I have grown up eating Cinti Chili and I have to say that it is awesome! You can have it on spaghetti noodles with just cheese, or noodles, onions, kidney beans and cheese (my fav, called a "five way" locally).
