Fontina, egg yolks and milk are warmed together in a heavy based saucepan. The melting mixture is then laced with shavings of fresh, pungent truffle. White truffle is the most typical in Piedmont. Use black, if you can't get white, but steer clear of truffle oil, which is usually a chemical concoction. Keep the fonduta warm. Then take a nice baguette or ciabatta bread and watch it happily disappear. I would follow a recipe to the letter sometimes with good results, often with just okay results. My daughter in law never used a recipe, never the pre-packaged envelopes of seasoning mixes and no matter what it was always good. This is a great recipe that won't tear up the gut but will fill that empty hole any time of the year. Great when paired with a pan of cornbread or even for making Chili Dogs. -- posted by CindiJ
