British Currant Scones, ATK

Fri, 23 Sep 2016 00:55:46 +0000

I like these scones plain, because of the delicious flavor, but you may serve with butter, clotted cream, and jam. And hot tea, of course! If you have any left the next day, they can be split and toasted. -- posted by cathyfood

Fri, 23 Sep 2016 13:53:20 +0000

For a lighter take on the classic Thai dish, a can of artichokes serves as a hearty meat substitute. The picture shows the preparation with maifun noodles, but the method is the same with rice noodles. -- posted by The Late Night Gourmet

Caesar Dressing

Sat, 24 Sep 2016 17:40:58 +0000

Contains no anchovy, made with Thai fish sauce, use right away, or sit for 30 minutes for flavored to fully develop. Lasts for up to a month in the fridge, serve at room temperature or cold. -- posted by Tuck Burnette

Carbonara

Sat, 24 Sep 2016 18:00:45 +0000

Contains no cream, of course. The idea of using half bacon and half pancetta, came from a cookbook by Geoffrey Zakarian. Too much cheese to me ruins a carbonara. -- posted by Tuck Burnette

Italian Cream Pound Cake

Sat, 24 Sep 2016 19:12:49 +0000

An advanced pound cake, do not omit the lemon filling, makes for a unique addition. Needs an icing, I don't have one yet, thinking something with limoncello!?? The lemon sauce recipe is on my site (not lemon curd), you will require 2/3 cup for the cake. -- posted by Tuck Burnette

Swiss Chard Rice Bowl With Chorizo

Sat, 24 Sep 2016 21:26:58 +0000

NY Times Recipe. For the swiss chard you could substitute collard greens or kale, but kale takes longer to cook. Spinach if you are in a pinch, but it is much lighter and doesn't have the sweetness and heartiness of flavor as the swiss chard. Start the rice and overlap the prep time. -- posted by gailanng

Sun, 25 Sep 2016 00:45:47 +0000

The tip to crisp red beet chips is to not only slice thinly but to "sweat" them first to remove excess moisture. This recipe includes instructions on how to sweat your beets. -- posted by Heather N.

Tomato and Anchovy Sauce

Sun, 25 Sep 2016 07:19:23 +0000

This is one of my favorite sauces. I use it on fresh and dried pasta. We make a lot because, keeping some of the sauce I turn it into other things, sometimes putting it in whore's sauce, and at other times saucing it in heavy cream and chili oil and serve it over boxed dry thin spaghetti. -- posted by Tuck Burnette

Spaghetti With Cheese and Black Pepper

Sun, 25 Sep 2016 07:40:19 +0000

Slow Cooker Creamy Potato Corn Soup

Sun, 25 Sep 2016 23:02:33 +0000

I made this with coconut milk and a little butter instead of the almond beverage. I also added a lot more jalapenos and some creamed corn to go with the canned corn and cooked this on the stove instead of the slow cooker. Good stuff. -- posted by AmyZoe

Bean Soup With Pasta Water

Mon, 26 Sep 2016 07:11:28 +0000

Good soup, love the flavor already used pasta water gives to the beans and broth. If you don't have homeade beef stock, use low sodium, but it isn't as good. -- posted by Tuck Burnette

Gnocchi

Mon, 26 Sep 2016 13:56:04 +0000

Making these pillows of potatoey goodness isn't as hard as the many steps below make it look. My family never pan fried the potatoes after boiling, but I like that relatively new development in the recipe, so I've added it in. And, despite what you hear on cooking shows, it's pronounced "NY-AWE-KEY" not "NY-OWE-KEY".My dad was born in northern Italy, and this is how he pronounces it, so I think he knows how to say it correctly. -- posted by The Late Night Gourmet

Potato Soup With Lemon Thyme

Mon, 26 Sep 2016 22:29:15 +0000

I love the flavor of lemon thyme, which is milder and brighter than traditional thyme. I always look for it in the supermarket and, in the spring, I usually buy a plant at my local garden center to use all summer! This makes a nice hearty soup. Sometime, I will substitute diced cooked ham for the sausage, which is just as nice. -- posted by JackieOhNo!

Vanilla Sugar

Tue, 27 Sep 2016 00:05:20 +0000

Really good way to keep a quart or two of sugar, buy lots of beans at Christmas or online, where they can be had for a reasonable price, sometimes they are available at Costco during the winter months. When the sugar starts running low, or below half, add more, stir and keep again. It will never go away. If you want to, the sugar can be ground with the vanilla and sifted before storing, and it's great that way too, but don't use as much of it. -- posted by Tuck Burnette

Limoncello

Tue, 27 Sep 2016 02:07:43 +0000

Make with organic lemons or scrub regular ones with a stiff brush in hot water. I live in Virginia, and Everclear isn't sold here, whenever I go to the Outer Banks I buy several bottles of it to make liqueur. You could also look for high proof vodka. Use the juice for lemonade (but it will require an extra lemon), or make a dessert that doesn't require any rind, like the Amalfi Lemon Delight. -- posted by Tuck Burnette

Amalfi Delight

Tue, 27 Sep 2016 02:48:27 +0000

Recipe came from a castle, near some olive trees, before I was done. I wasn't planning on publishing this recipe yet, because it really is Italian, and uses English approximations for metric system equivalents. It also uses leaf gelatin, which you have to buy online, or in fancy grocery stores, technically, 3 sheets of gel are the same as 1 pack of granulated, except gelatin sheets bloom in water openly, and as we know, powdered gelatin, soaks it up, so I really can't say if that would throw off the flavors? Use at your own discretion. -- posted by Tuck Burnette

Mini Baked Oatmeal

Tue, 27 Sep 2016 02:50:47 +0000

Naturally sweet from the banana. Makes a delicious and healthy snack. From http://chocolatecoveredkatie.com/. -- posted by Jen in Victoria, BC

Garlic Croutons

Tue, 27 Sep 2016 02:59:10 +0000

Use really good bread like a baguette, or a homeade loaf, day old. I use 1/2 of a good bakery baguette, and buy an extra one anytime I know I want salad, trim the end off. -- posted by Tuck Burnette

Single Acting Baking Powder

Tue, 27 Sep 2016 03:43:38 +0000

This does not last as long as commercial baking powder, and is more expensive to make, however, it will last three months in the refrigerator. The substitution is one for one in all cases where baking powder is called for. -- posted by Tuck Burnette

Lemon Ice Sorbet

Tue, 27 Sep 2016 03:52:55 +0000

Made from a can of lemonade concentrate, filtered water really brings out the flavor in the ice cubes, or lack there of, haha get it??? Do not keep more than 12-24 hours before serving, sorbet is best served the day it's made. Note: Cook time is indicative of freeze time. Im so glad I found this recipe in an old cookbook from the 60's probably. -- posted by Tuck Burnette

Lemonade

Tue, 27 Sep 2016 04:02:51 +0000

Chill 8 hours before using. Best results come with filtered water. -- posted by Tuck Burnette

Ricotta

Tue, 27 Sep 2016 04:41:25 +0000

To make ricotta at home pasteurized whole milk is required, not ultra pasteurized, some markets label milk pasteurized, when indeed it is the latter (i.e. the Wall Town near you), a good indicator of this is that it will say on the label, Use within 5 days after opening; that means it's been pasteurized. Most grocery stores sell a variety of it, but if not, go elsewhere. It is okay for the cream and buttermilk to be regular. If you have some sour milk lying around, use that, or make your own by letting it spoil. Note additionally: There is a common belief that a person can make ricotta by draining it through a layer of coffee filters, this is an outright lie, the people who say it, have never done it, it's cheap, deplorable, is a mess, and it doesn't work. Do not do this, take your big A to world market or bed and beyond and buy several sheets of good cheesecloth, or use a clean flour sack towel, sold in packs of three for 9.99 at one of the above mentioned stotes. Right tool, right job, right, yeah anyway...? -- posted by Tuck Burnette

Peach Preserves

Pomegranate Syrup

Tue, 27 Sep 2016 04:57:20 +0000

The best way to take the seeds from a pomegranate is to split them in a deep bowl of cold tap water. The pithy exterior easily drops away from the fruit. -- posted by Tuck Burnette

Chicken Soup

Tue, 27 Sep 2016 05:50:27 +0000

Make the stock as described in "Chicken Stock" recipe, others can be used as well, make sure it's salty. From the meat of a 5-pound chicken, I usually reserve the drumsticks for something else, but use the thighs. -- posted by Tuck Burnette
