Chicken Wing King

Wed, 16 Aug 2017 20:46:59 +0000

You can become the King of Wings with this recipe. Roll it out at BBQ's, family gatherings and parties and trust me, the plate will be clean and everyone will be looking for more. Every time I cook this recipe I always think I am over catering and by the end of the night there is not a spare wing in sight. My favourite version is with the Harvey's Kitchen 'Sally' Spice mix, but if you like it hot shake Harvey's Kitchen 'Bernie' over the wings. -- posted by David W.

Low-Carb Cheesy Eggplant Parmesan

Thu, 17 Aug 2017 19:15:48 +0000

Our vegetable garden has been producing a lot of wonderful looking eggplant and we love to fix eggplant Parmesan with it. We tend to eat Keto and low-carb, so I modified some traditional recipes with some tasty twists to make it very cheesy, low-carb, easier to make, and a lot less greasy. Love it best with hot Italian sausage. Be careful with any salt if you do ues sausage as the sausage and the Parmesan cheese both are fairly salty. -- posted by Tomaso Basso

Individual Mini Raspberry Cheesecakes

Thu, 17 Aug 2017 20:25:07 +0000

I love the taste of fresh raspberries when they are in season. We try to eat Keto and lower-carb, so I took some traditional cheesecake techniques and made an easier version that is both tasty and lower-carb. I like to serve it with a raspberry sauce underneath it and no-sugar milk chocolate shavings on top of it. Makes for a very fancy looking desert. -- posted by Tomaso Basso

Tasty Balsamic Chicken With a Twist

Fri, 18 Aug 2017 17:55:57 +0000

This is a take on balsamic chicken with a twist thrown in. The addition of crackers (Savoritz original style, or Ritz, or any similar brand is fine) soaks up the sauce and gives it an added texture and flavor punch. I've tried to give this measurements but to be honest I never measure, I just do what 'feels right'. My husband has suggested we increase the sauce amount to serve over rice so that's an option too if you feel experimental. Serve with cilantro lime rice or coleslaw. -- posted by Amber M.

Fry Jacks

Very popular in Belize, this breakfast bread is a real treat! Enjoy the bread with a side of refried beans and some cheese and you've got quite the Belizean meal. Although you can use coconut milk, this is typically made with whole milk. I happily found this from a couple of sources while researching Central American food. Enjoy! -- posted by Nif_H

Johnny Cakes / Journey Cakes

Sun, 20 Aug 2017 14:50:09 +0000

These cakes are found on many street corners in Belize, often deep fried. They are originally believed to be called Journey Cakes as they are suitable for trips, keeping for weeks. This is not the crumbly cornmeal version often found in the southern states. This baked version is from Africa Bites and uses coconut milk. Enjoy! -- posted by Nif_H

Belizean Garnaches

Sun, 20 Aug 2017 18:30:38 +0000

I love this street vendor dish, although I wish I could try it right in Belize! Day old or stale corn tortillas are preferred as they have a lower moisture content and fry up better. There are other toppings that you can use on this but I like this traditional version. Enjoy! -- posted by Nif_H

Blueberry Lime Jam

Sun, 20 Aug 2017 21:53:15 +0000

This recipe was taken from the NY Times Cooking section. The flavor of blueberries resides almost completely in the purple skins, full of compounds called terpenes. The skins have piney, citrusy qualities, but those flavors cook off quickly, which is why blueberry pies and jams so often taste of sweet and nothing else. Adding lime juice and zest after cooking brings back the sweet-tart balance of the berries. Note: Cooking time below includes refrigeration time for gel to completely cool and set. -- posted by Maureen in MA
