It's Finally Here!

2010-05-14T08:49:10.607-07:00

Pictures to Follow.

New book

2010-05-03T17:40:12.597-07:00

I found this book through a side add on Facebook. I just started it, but so far it's very easy to read.

got milk?

2010-04-29T07:11:00.281-07:00

Real Milk, that is!

Spanish Rice

2010-04-28T06:34:00.884-07:00

I tried out this recipe for Spanish rice and we loved it. The only change I made is to add chili powder while I browned the onion. Corn would have been good with it, but didn't have any on hand.

Ground Beef with homemade seasoning.

Gabriel's Room is Almost Finished!

Archangel Gabriel

We love Ikea! (Not so much for adult furniture)

Easy Spinach Dip

2010-04-26T08:36:01.439-07:00

This is super easy and quick to make and Gabe loves it.
Saute onion and garlic. Add thawed spinach (1 square package).

Cook to warm through. Add 1 package of cream cheese, a splash of milk, salt and pepper and some asiago cheese. Done!

New Find!

2010-04-26T05:23:19.183-07:00

They started carrying this at Wegman's and Whole Foods (maybe they always did - i just started noticing it recently). It comes in about 10 different flavors, including LEMON! It's to die for. We usually only buy Fage, plain yogurt. These are 1/3 of the price of Fage and a nice change when I am too lazy to puree the fruit myself.

We're making Pizza together!

Gabe had such a good time making pizza and cookies today!

Yet another Pizza...

2010-04-20T03:37:00.547-07:00

I found this recipe here, but I am not imressed with it. The dough was very dense.

PW's Blackberry Cobbler

2010-04-18T16:34:24.831-07:00

Really good, but too much sugar on top. I would double the recipe next time. Also, an hour is too long in the oven. 50 min or less will do. Recipe here.

Homemade Pizza Sauce

2010-04-18T16:06:33.385-07:00

Got to try this next time I make pizza. I usually just use plain canned tomato sauce.

Self-Rising Flour Substitution

2010-04-18T15:59:08.385-07:00

  1. Using a dry measure, measure the desired amount of flour into a separate container.
  2. For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.
  3. Mix to combine.

1 kg flour
10 egg yolks
salt
250 g melted butter
2 tsp rum
2 tsp vanilla
zest of 2 large oranges
4 teaspoon yeast
1/2 liter milk

Filling:
400 g sugar
400 g nuts (crushed)
6 egg whites
3-4 tbsp coco powder
sugar to taste
rum
vanilla

Heat milk to 102 F. Divide in two half's - in one add 4 table spoons of flour and the yeast and in the other the sugar, vanilla, rum and orange peel.

In the kitchenaid, start of (low speed) with the eggs, add milk with flavorings, butter then the flour (cup by cup). After the first 3 cups add the milk and yeast mixture and continue adding the remaining flour (with a dough hook attached).

Grease a large bowl with vegetable oil and place dough in it and let rise at warm temp for an hour or until doubled in size. Divide dough in 3 equal parts and then divide those in half.

Filling: Beat the egg whites and sugar until peaks form. Add coco powder and nuts.

Spread each portion out and spread the filling inside it. Roll back up and braid with it's other half (which needs to be filled and rolled the same prior).

Bake at 350 until golden brown ca. 45 min.

1 cup (140 grams) all-purpose flour
2 teaspoons (7 grams) baking powder
1/4 teaspoon salt
2 tablespoons (28 grams) granulated white sugar
1 large egg, lightly beaten
1 cup (240 ml) milk
2 tablespoons (28 grams) unsalted butter, melted
Plus extra melted butter for greasing the pan.

In a large bowl whisk together the flour, baking powder, salt and sugar. In a separate bowl whisk together the egg, milk, and melted butter. Make sure you do not over mix the batter or the pancakes will be tough.
