Spanish Rice


I tried out this recipe for Spanish rice and we loved it. The only change I made is to add chili powder while I browned the onion. Corn would have been good with it, but didn't have any on hand.

Easy Spinach Dip


This is super easy and quick to make and Gabe loves it.
Saute onion and garlic. Add thawed spinach (1 square package).

Cook to warm through. Add 1 package of cream cheese, a splash of milk, salt and pepper and some asiago cheese. Done!

New Find!


They started carrying this at Wegman's and Whole Foods (maybe they always did - i just started noticing it recently). It comes in about 10 different flavors, including LEMON! It's to die for. We usually only buy Fage, plain yogurt. These are 1/3 of the price of Fage and a nice change when I am too lazy to puree the fruit myself.

Really good, but too much sugar on top. I would double the recipe next time. Also, an hour is too long in the oven. 50 min or less will do. Recipe here.

Homemade Pizza Sauce


Got to try this next time I make pizza. I usually just use plain canned tomato sauce.

Self-Rising Flour Substitution


  1. Using a dry measure, measure the desired amount of flour into a separate container.
  2. For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.
  3. Mix to combine.

Making Baby Food ... Again


Made a organic vegetable chicken soup with rice.

Olive oil with carrots and onions, simmering in a little bit of spring water.

All for the best baby in the world! That didn't like it at all! :(

Pot Roast


{Can you tell the above picture was an afterthought?...That good!}

Brown (Beef Chuck) Pot Roast on both sides. Place in Crock Pot. Reserve 1 tbsp of the drippings. Quarter a whole onion and 4 cloves of garlic and salute in the oil until translucent. Add 1 cup of red wine and bring to a simmer. Add 4-5 tbsp of tomato sauce, salt and pepper and a bay leave. Bring to a simmer. Poor over beef and cook on low for 8 hours. Add vegetables, such as carrots and potatoes, half ways through the cooking time.

Stuffed Mushrooms



8 oz of Goldcoast crab or lobster spread
16 oz mushrooms (medium)
2 tbsp Parmesan cheese
1 tbsp melted butter
fresh chives, chopped


Preheat oven to 350. Place caps in an oven safe dish. Fill each cap with 1 tsp of filling. Sprinkle with cheese and brush sides with butter. Bake for 20 min or until bubbly. Garnish with chives.


Cozonac Moldovenesc cu Nuca



1 kg flour
10 egg yolks
250 g melted butter
2 tsp rum
2 tsp vanilla
zest of 2 large oranges
4 teaspoon yeast
1/2 liter milk

400 g sugar
400 g nuts (crushed)
6 egg whites
3-4 tbsp coco powder
sugar to taste

Heat milk to 102 F. Divide in two half's - in one add 4 table spoons of flour and the yeast and in the other the sugar, vanilla, rum and orange peel.

In the kitchenaid, start of (low speed) with the eggs, add milk with flavorings, butter then the flour (cup by cup). After the first 3 cups add the milk and yeast mixture and continue adding the remaining flour (with a dough hook attached).

Grease a large bowl with vegetable oil and place dough in it and let rise at warm temp for an hour or until doubled in size. Divide dough in 3 equal parts and then divide those in half.

Filling: Beat the egg whites and sugar until peaks form. Add coco powder and nuts.

Spread each portion out and spread the filling inside it. Roll back up and braid with it's other half (which needs to be filled and rolled the same prior).

Bake at 350 until golden brown ca. 45 min.

Blueberry pancakes



1 cup (140 grams) all-purpose flour
2 teaspoons (7 grams) baking powder
1/4 teaspoon salt
2 tablespoons (28 grams) granulated white sugar
1 large egg, lightly beaten
1 cup (240 ml) milk
2 tablespoons (28 grams) unsalted butter, melted
Plus extra melted butter for greasing the pan.

In a large bowl whisk together the flour, baking powder, salt and sugar. In a separate bowl whisk together the egg, milk, and melted butter. Add the egg mixture to the flour mixture, all at once, and stir or whisk just until combined. The batter should have some small lumps. Make sure you do not over mix the batter or the pancakes will be tough.
*Add fresh blueberries to the batter....
