I made something very similar to this recipe yesterday - although I took a few steps out (mainly the straining), because I'm lazy :) I really recommend this recipe to everyone now, I think beetroot ice-cream is one of those things that sounds horrible until you try it, but the taste is earthy and creamy and lovely :) I also used pre-cooked beetroot in my version, which I know is a bit of a cheat, but it saves a lot of effort and prevents getting those horrible beetroot-stained hands! I'd definitely try again using this recipe though, once the beetroot is ready in the garden I'll get digging and have a crack at it! http://pocketfulofflour.wordpress.com/2014/09/05/beetroot-ice-cream-2/

I would only add almond extract for a nicer flavor.

I tried this recipe, and it is definitely one of the best ice creams I have made (although I say that about every ice cream I've made...). It took a LOT longer than I thought it would- just getting the mixtures ready for churning took almost three hours (but also, I started it very late at night- it might have gone more quickly if I had done it during normal human hours). Also, I cut down on the amount of eggs, as 8 seemed pretty excessive to me. I used four eggs, which is still more than I normally use in a custard-based ice cream. Overall, it turned out PERFECT. Amazing, vibrant flavor and insane color.
