I love rugelach cookies I make them everyday at this new york deli I work at.. I dont quite follow the same steps or recipe you do but they are amazing anyways.. my recipe is alittle eaiser..
take equal parts butter, and cream cheese, and cream till all is mixed and then add equal parts a.p. flour and mix till all combine.. take out of the bowl and roll out till thickness is alittle over a 1/4 in. cut into desired strips and spread any flavor jam and sprinkle chopped walnuts then roll into desired shapes. be sure to use an egg wash so the cookie dose not open. egg was the top and sprinkle cinnamon sugar on the top. then bake @ 350*F till golden brown.. no need to rest the dough and all the extra steps. just mix, roll, egg wash and bake!! its that easy and they are so yummy!!

the recipe I use is:
3 # butter
3 # creamcheese
3 # all purpose flour
as needed jam
as needed walnuts
as needed egg wash

and another amazing thing is to add chocolate chips instead of jam and walnuts.. Its to to die for.. Chocolat rugelach!! YUMMY!!

I'll pretend it's Christmas anytime! I started tempering chocolate this year too. You're right, it's not difficult, but the process is interesting and seems to go differently everytime. I find it's most important just to attune my senses to what I'm looking for in the chocolate.

Happy New Year Mandy,

Thanks for extending the Christmas mood and tantalising us still with all the goodies. I might make it for upcoming CNY! Hehe, I've not been a real fan of CNY cookies (too dry except for pineapple tart), so here goes. But while looking at the method, I must say its all pretty time consuming, and I really salut you for having the patience. Well, I will try my best to instill that in me, just for once, this CNY. Cheerios!
