Yup, buying pancake mix to make pakodas does sound funny! :-)
How did u use the Costco bag of pancake mix? I bought Bisquick from Costco once and had to throw most of it out b'coz I could not use it all before the expiration date. I now buy little boxes from my regular grocery store.

That is a neat idea to use pancake mix! I will try that sometime. I used to buy these huge bags from costco, but now there is a grocery store that sells things in loose, so I buy only how much I need. Now i have to buy pancake mix to make pakodas, sounds funny but excited to give a try!

Thanks to my mom, I'm able to post these traditional recipes. Less than 2 months to go before my folks head back to India. Will try to get as many different recipes as possible! :-)

Nee - So glad that you tried the akki rotti and liked it too! Yup, there are different types of akki rottis and this one is not supposed to puff up. So u did right, girl! :-)
Also a tip for re-using the tawa or bandli after the first rotti is done, is to cool the bottom of the tawa/bandli under running tap water and then it's ready for the next one! Alternately, u can also pat the dough on a greased aluminium foil or butter paper and then transfer it to the hot tawa.

Hey Vani,

Just wanted to tell you that I tried your Akki Rotti recipe last night. I have no idea how it is supposed to taste, so I don't know if it came out the way it's supposed to. I remember Asha had posted a recipe for it and she had mentioned that it should puff up like a phulka - but it didn't for me, maybe because she doesn't add the additional veggies, and she uses the rice, instead of rice flour? Do different parts of Karnataka have different versions of the rotti?
Hmm...well, all I know is that whatever I made came out really tasty and was totally devoured by us two starving lunatics. So, thanks a ton!
