I love this blog! I came here to find a recipe for pork belly (hopefully twice cooked) and you have so many other great things too. Have seen many twice-cooked p.b. dishes talked about elsewhere but few recipes. One question, I can see that the outer layer is deliciously crisp but what about all the fat on the inside? Do you eat everything? I had thought that twice-cooking (say braising and then roasting) might go far to melting out some of that fat. But maybe there's no need?
