You know, Joey, I've never made ham stock before, but after reading your inspiring post, I now feel like I must have it on hand. My grandmother used to make rice with some broth and juice from a baked ham around holiday times, but I for the life of me can't recall any details...I was a kid, and way more interested in eating and playing than in cooking in those days.
