Ahh ... th economy! As someone who loves to cook - I've always eaten more at home than out. Lately - I may becoming a wee bit silly though. After watching a video of making crackers, I stopped buying my favorite water crackers thinking, "I can do that." And didn't. I actually am spending more because I want it fresh and organic and local when possible. When the garden comes to fruition, I hope to have savings. (Unless I start giving stuff away???)

My blog is a direct reflection of being recession chic. I had to close down my business within the last year and my wife has been laid off twice. Over the last 3 months I started my blog because I could not afford to eat out like I did before. I'm not saying I cook the cheapest stuff in the world but it definitely is a more efficient use of our money.

Did you know that mangoes are known as the "king of fruit"? The mango has been grown in Southeast Asia for more than 4,000 years. According to Indian legend, Budda found tranquility in a mango grove. Mangos are a symbol of love, some people believe that the mango tree can gran wishes.
Whether the mango can grant your wishes or not I can grant you that the mango is a great tasting fruit that has health benefits to boot.
Mangoes are a high volume food, meaning they contain a high percentage of water, so you get a lot of fruit for not a lot of calories (about 135 calories for a whole mango). Mangoes have a lot of potassium, vitamin A and beta-carotene, plus they have some vitamin C, vitamin K, calcium, phosphorous, and magnesium!

Mango Sorbet

Ingredients
2 lbs mango pulp
1/2 tsp lemon juice
grated rind of 1 orange and 1 lemon
4 egg whites whisked until peaks form
1/4 cup superfine sugar
1/2 cup whipping cream
1/2 cup confectioners sugar

1 In a large chilled bowl mix half of the mango pulp withthe lemon juice and the grated rind.

2. Gently fold in the egg whites and the superfine sugar. Cover with plastic wrap and place in the freezer for at least 1 hour.

3. Remove and beat again. Transfer to an ice cream container and freeze until fully set.

4. Whip the cream with the confectioners sugar and the remaining mango pulp. Chill the sauce for 24 hours. Remove the sorbet 10 minutes before serving. Scoop out individual servings and cover with a generous helping of the mango sauce.

Wonderfully refreshing after a spicy meal or by itself on a hot summer evening.
