I have the Wine Lover's cookbook and have made this recipe many times. The recipe actually calls for "dry" Monterrey Jack cheese, which is similar to Parmesan cheese, but has a milder taste. If you cannot find dry Jack cheese (I found it at Central Market and Whole Foods stores), then substitute Parmesan. I also add well-drained frozen spinach to the stuffing for a prettier presentation and more flavor. This is a delicious and company-ready dish.
