I believe it would be best to make most of our tomatoes into sauce to either can or freeze. We use it waaaay more often than just dried tomatoes and most of our tomato purchases were for that purpose over the winter. Or perhaps we could dice and can some of them?

Maybe I can negotiate a pressure cooker for canning the green beans. I still have trepidations about drying all the green beans. Perhaps it's from how much I've always liked my grandmother's green beans?

Definitely some bok choi next year. I never realized how much I love it until this summer. Maybe the raised beds will do well next year if "we" spread the fall yard waste on the beds, like "we" did with the original garden last year?

We should have more of that lettuce with dinner tonight..., which I'm assuming will be that squash/zucchini/ricotta thing, right?
