Sorry for the delay in posting the round-up but I've been unwell with a cold. As you all know I have been managing Sweet and Simple Bakes since Rosie's on-going back problems and unfortunately due to other commitments I need to take a break. Cranberry, Pecan and White Chocolate Cookies

These are the perfect Christmas cookie! I’ve baked different varieties of this combo but this cookie recipe wins hands down. I first made these cookies last Christmas and needless to say everyone simply loved them and I received many compliments. These soft but chewy cookies are a gorgeous combination of smooth white chocolate, blended wonderfully with the cranberries, the rolled oats and crunchy pecans. These supreme white chocolate and cranberry bejewelled cookies are the finest you’ll ever taste and they won’t last long. Snow-Flecked Brownies

(image) This month’s recipe is Snow-Flecked Brownies. We haven’t baked brownies here at Sweet and Simple Bakes and this recipe is my favourite which I make time and time again and one I am sure you will keep making too. These brownies are the essence of decadence, with their gooey chocolate centre, studded with chunks of white chocolate and the final touch, a light dusting of icing sugar for a snowy effect! Perfect for the Christmas season.

Cookies have not featured too much in our monthly bakes, so this month we are addressing that balance with this cookie recipe. Generally cookies are quick and easy to assemble and this recipe is no exception. I’ve baked these cookies before and they were a roaring success, they didn’t last 24hrs in the cookie jar! These cookies are light, crispy, chewy and full of intense orangey chocolate flavour. St Clement's Drizzle Cake

This month’s recipe is a traditional British favourite and a cake you will find in most tea rooms over Britian, St Clement’s Drizzle Cake. I can only presume that the name of this cake originates from the poem about execution turned nursery rhyme Oranges and Lemons! I remember playing the singing game associated with this nursery rhyme in Primary school. Only recently did I realise its origins but maybe the lines “Here comes a Chopper to Chop off your Head, Chip chop chip chop - the Last Man's Dead”, should have given it away! This quick cake recipe produces a very light and moist sponge that is bursting with those wonderful citrusy flavours soaked through, finished with a crunchy sugary top. Jammy Doughnut Muffins

This month’s recipe is Jammy Doughnut Muffins. I am reminiscing of seaside holidays where warm jammy doughnuts covered in sugar and then passed warm from the vendor in a paper bag are abundant. I have in the past challenge Mr R (hubby) to eat a sugared doughnut without licking his lips until he had finished eating. It’s more difficult than it sounds believe me......lol.We are going a little healthier with this recipe by making Jammy Doughnut Muffins! No oil in sight to fry them as with the real McCoy of doughnuts, and I have pleasure in saying these muffins are quick and simple to make and delicious, just what Sweet and Simple Bakes is all about! There is a buttery sugared topping on your initial bite with a soft vanilla sponge and then followed by a delightful jam interior, you could even ring the changes by using different flavoured jams. You may have some delectable homemade jam(s) you wish to use or what about the sublime Dulce de Leche, (“toffee sauce”) even a thick vanilla custard or stewed apples. We can’t wait to see what variations you come up with. Hello our ‘dear’ S&SB Bakers :0)

I have a huge favour to ask you if you are using Wordpress for blogging. One of our latest members is seeking advice on how to upload and post Sweet & Simple Bakes Monthly Baking Badge to their site. I'm somewhat out of the loop on this as I have only used Blogger and I’m not sure if it is the same principal in Wordpress.

Carrot Cake with Cream Cheese Frosting

Carrot cake has to be one the best classical cakes around, and I have never found anyone yet who refuses a slice. The use of carrots have been included in many sweet recipes in Britain since medieval times. There are many recipes for carrot cake but for me this has to be one of my family favourites! You could exchange the sultanas for raisins and walnuts for pecan nuts it really is a forgiving cake that does not mind a few little tweaks here and there.The wet ingredients added to the dry ingredients and mixed together in this bake makes for yet another sweet and simple bake. The cream cheese frosting finishes off the cake a treat. However, the frosting maybe omitted if you so wish and served plain. I have seen little fondant carrots adorn tops of cakes and they do look fantastic or for simplicity a few sprinkles of choice or walnut halves, work just as well for me. The recipe can be found here. I am delighted to present this month a recipe for Chocolate Orange Drizzle Loaf Cake. Chocolate and orange combinations are a charming classical flavour. My family simply adore this bake and it remains to be one of the most popular loaf cakes in my household. The sponge has orange zest running through and then soaked throughout after baking by orange syrup, which makes a moist crumb and finally a chocolate topping to finish off. After much contemplation between myself and Maria due to our own personal commitments, we felt that it would be in both our interests to review the way we both gather each month’s information for each Round-up. We also wanted to ensure that things run smoothly as possible for us all here at Sweet & Simple Bakes, which we hope you will fully agree with us on this matter.

What we propose for the future, each Baker at Sweet & Simple Bakes who completes the bake for the month will send an email to;

Vanilla Cupcakes

It’s Spring Time here in the U.K. and I thought it would be nice to represent this season with some colourful Vanilla Cupcakes for our next bake here at Sweet & Simple Bakes. This is an easy bake because you don’t need to cream the sponge mixture; it’s an all-in-one- method. The trick here is to ensure your butter is soft enough to blend in quickly with all the other ingredients. These cupcakes taste wonderful of a buttery and vanilla sponge, with a creamy delightful vanilla buttercream - just like momma used to make!
To ensure feather light sponges, do not over mix the sponge mixture. I hope you enjoy this recipe as much as I do and if you have any queries or questions please leave a comment under the recipe and we’ll endeavour to reply as soon as possible.

(image) For our next Sweet and Simple Bake I’ve chosen this easy recipe for Oatmeal and Chocolate Chip Cookies. I’ve baked these cookies with success numerous times and are a firm favourite in my home. These cookies are a heavenly balance of crunchy and chewy, savoury and sweet and are simply addictive. If you are trying to be “healthy”, substitute raisins or nuts for the chocolate chips. Cherry Bakewell Cake

Hola ‘dear’ S&SB bakers, the votes have been cast and now tallied and we have pleasure in announcing our winner for this month’s bake ~ Cherry Bakewell cake. If you adore Bakewell Tart then you’re really going to find this cake irresistible with its moist and feather-light sponge and almond/ morello cherry flavour running through. Additionally if you find morello cherry conserve/jam difficult to source, substitute with raspberry conserve/jam and it will be just as delicious! A few glacé cherries placed on top of the icing additionally with the flaked toasted almonds would also be a lovely.
