I also use probiotics to help get their gut working well again. I put one ounce on each feeding. The Hess has a very low sugar level, so it helps avoid sugar shock. The roll mix is really just a sprinkle, 1/8 of a cup at most.

We have had success with the starved horses we have rehabbed, but each one is different. Feeding a starved horse is a complicated task. Besides the need to get calories in them, you have to watch sugars and realize that their system can't handle much food. I always had the vet do blood work to check mineral balances so we could factor that in also.
I use a soaked mash of timothy pellets (or plain hay pellets depending on the horse), with a very small amount of roll mix, and Hess (1,000 calories in a cup of feed). 4-6 small feeding to start and then up the volume of the feeding slowly. Eventually dropping to three meals a day for several months.
You will do a fine job.
